Beef and Lentil Stew
This hearty stew is the perfect winter meal. Rich and flavorful, this recipe contains nutrients from beef and lentils.
Ingredients:
-1 tablespoon olive oil
-1 pound beef stew meat, trimmed and cut into 1-inch cubes
-1 large onion, diced
-2 cloves garlic, minced
-1 can (15 ounces) of black beans, drained and rinsed
-1 can (14.5 ounces) diced tomatoes
-1 cup beef broth
-1 cup lentils
-1 teaspoon ground cumin
-Salt and pepper, to taste
Directions:
1. Heat the oil in a large skillet over medium heat. Add the beef stew meat and cook until browned, about 5 minutes. Add the onion and garlic and cook until softened, about 5 minutes. Stir in the black beans and tomatoes.
2. Pour the mixture into the slow cooker and stir in the broth, lentils, and cumin. Cook on low for 6 hours or on high for 3 hours—season with salt and pepper to taste.
Chicken Mole

Ingredients:
-1 lb. boneless, skinless chicken breasts
-1 can (15 oz) black beans, drained and rinsed
-1 can (14.5 oz) diced tomatoes, undrained
-1 small onion, diced
-2 cloves garlic, minced
-2 tablespoons chili powder
-1 teaspoon ground cumin
-1/2 teaspoon dried oregano
-1/4 teaspoon salt
-3 tablespoons grapeseed oil or vegetable oil
-1/4 cup chopped fresh cilantro
-1/4 cup sour cream or yogurt
Instructions:
1. Place the chicken in the slow cooker.
2. In a bowl, combine the black beans, diced tomatoes, onion, garlic, chili powder, cumin, oregano, and salt. Pour this mixture over the chicken in the slow cooker.
3. Cook on low for 6 to 8 hours or high for 3 to 4 hours.
4. When done cooking, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir in grapeseed or vegetable oil and cilantro. Serve with sour cream or yogurt on top if desired.
Low-Carb Lasagna

Ingredients:
-1 pound ground beef
-1 can diced tomatoes (14.5 ounces)
-1 small onion, minced
-1 teaspoon garlic powder
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-8 ounces tomato sauce (not concentrate)
-8 ounces tomato paste (not concentrate)
-24 lasagna noodles
-3 cups shredded mozzarella cheese
-3 tablespoons grated Parmesan cheese
-1/4 cup chopped fresh parsley leaves
Instructions:
1. Preheat oven to 375 degrees F (190 degrees C).
2. Combine ground beef, diced tomatoes, onion, garlic powder, salt, and pepper in a bowl. Mix well. Arrange the mixture in a greased 9×13-inch baking dish.
3. Bake for 20 minutes or until browned.
4. In a bowl, mix tomato sauce and tomato paste. Pour the beef mixture into the baking dish.
5. Cover and bake for 30 minutes or until the lasagna are hot and bubbly.
6. Meanwhile, cook lasagna noodles al dente according to package directions.
7. Drain noodles; return them to the pot. Add mozzarella cheese, Parmesan cheese, and parsley. Stir until the cheese has melted and the ingredients are well combined.
8. To assemble lasagna, spoon 1/3 of the meat mixture into the bottom of a 6-quart crockpot. Top with half of the noodles, then adds another third of the meat mixture, followed by another layer of noodles and all the remaining meat mixture. Top with the remaining noodles. Pour any juices left in the pot over the top of the lasagna and spread evenly.
9. Cover and cook on low for 4 hours or until heated. Allow resting for 10 minutes before serving. Enjoy!
