  • 1 lb raw shrimp, peeled and deveined
  • 3⁄4 cup white wine

  • 3 tablespoons minced garlic
  • 1⁄4 teaspoon paprika
  • 1⁄2 tablespoon parsley flakes
  • grated parmesan cheese

Directions:

  • Bring wine, olive oil, butter, margarine, and garlic to a simmer in a large saucepan over medium heat. Bring it back to a simmer and cook for another minute or two.
  • Stir in the paprika and parsley flakes, then add the shrimp.
  • Prepare the sauce, then combine all ingredients and simmer for several minutes or until the shrimp is opaque.
  • Do not overcook. Spoon shrimp into a dish with some of the sauce and plenty of parmesan cheese.

  • 4 rib-eye steaks (1/2 in)
  • 1⁄4 teaspoon pepper
  • 1⁄4 teaspoon salt
  • 4 tablespoons butter (divided)
  • 3 teaspoons green onions, chopped
  • 1 teaspoon prepared mustard
  • 1 teaspoon lemon juice
  • 1 1⁄2 teaspoons Worcestershire sauce
  • 1 teaspoon parsley
  • 1 teaspoon fresh chives, minced

Directions:

  • Season the steaks with salt and pepper. In a large pan, melt 2 T butter over medium heat. Stir in the onions and mustard. Add the steaks to the pan—Cook for 3 minutes on each side. 
  • Remove from the pan and place on a serving platter to keep warm. Add lemon juice, Worcestershire sauce, and remaining butter to the skillet. Cook for about 30 seconds or until the sauce has slightly thickened. Pour over steaks and sprinkle with parsley and chives.

Dessert

Creme Brulee

  • 1-quart heavy cream
  • 1 teaspoon vanilla extract
  • 1⁄2 cup sugar
  • 10 egg yolks
  • 1 pinch salt

Caramel Topping

  • 1⁄2 cup sugar
  • Use 6-oz. ramekins.

Directions:

  • Preheat the oven to 325°F. In a medium saucepan, combine the cream or cream and milk and simmer over medium heat until scalded, being careful not to let it boil (bubbles will appear on the surface of the mixture). If using vanilla bean, split it in half and scrape the seeds into the cream.
  • Meanwhile, combine the sugar and salt with the egg yolks in a medium mixing dish. Slowly blend the hot cream into the sugar/yolk mixture while tempering it. Strain the mixture through a fine sieve into a pitcher or measuring cup and add vanilla if desired.
  • Fill the ramekins with the batter. Then place them in a deep baking dish with sides. Fill the baking dish halfway with water and cover it with foil to steam—Bake for 25 to 50 minutes, or until just set.
  • Start checking early; the baking time of your ramekins and baking dish will vary. After removing the baking dish from the oven, let the ramekins cool in the water bath for a few moments. Then, remove, cover with plastic wrap, and refrigerate for at least 2 hours or 2 days.
  • Topping: Sprinkle a thin layer of sugar over each cold creme brulee just before serving. Caramelize the sugar using a propane torch or under a broiler.
